〔記者蔡政珉/苗栗報導〕隨著夏日氣溫持續攀升,食品安全不可忽視!苗栗縣政府衛生局指出,依衛福部統計,每年3月至8月是沙門氏桿菌、仙人掌桿菌及金黃色葡萄球菌的感染高峰期,其中,民眾常吃的生蛋、禽肉、炒飯、炒麵、三明治及便當等熟食,皆屬較高風險食品,並提供相關秘訣供民眾參考。

苗栗縣政府衛生局局長楊文志提醒,食品業者與民眾應緊記「五要」原則:包括:一、要洗手(飯前、如廁及處理食品前後都需徹底洗淨雙手,手部有傷口要先包紮);二、要新鮮(食材要新鮮、用水要衛生);三、要生熟食分開(處理及盛裝生熟食需使用不同器具,避免交叉污染);四、要澈底加熱(食品中心溫度應加熱至70℃以上);五、要注意保存溫度(冷藏溫度低於7℃、熱藏溫度需高於60℃、室溫不宜放置過久);另外,不食用不明的動植物。

苗縣府衛生局強調,為降低食品中毒風險,生蛋及禽肉應保持新鮮並徹底加熱後食用,優先選用殺菌液蛋或洗選蛋;處理食材時,應確實區分生熟食器具,避免交叉污染。炒飯、炒麵等熟食則不宜長時間置於室溫環境,應儘速食用或妥善冷藏保存。
