中新社武汉6月1日电 (记者 张芹)2026年全国粮食和物资储备科技活动周6月1日在武汉启幕，同步举办主题展，系统展示中国在全谷物科技攻关、标准体系建设及产业创新中的成果。
中国国家粮食和物资储备局科学研究院院长谭本刚认为，随着《国家全谷物行动计划(2024—2035年)》落地实施，在政策引领、标准完善、科技突破、市场培育多方合力下，全谷物食品在中国正逐步从“小众选择”迈向“大众日常”，市场消费习惯正在发生积极转变。
记者在主题展现场看到，黑青稞苦荞挂面、全麦馒头、糙米饼干等全谷物食品琳琅满目，部分企业现场演示全谷物食品制作过程，让观众直观感受全谷物食品从“难煮难吃”到“便捷适口”的转变。
“全谷物是一个重要的健康膳食理念，它保留了种皮、胚乳和胚等完整结构，营养与活性物质丰富。”谭本刚指出，全谷物食品营养全面、功能多元，是传统“五谷为养、治未病”养生智慧与现代营养理念的有机结合，契合民众健康膳食新期待。
谭本刚认为，精制加工导致粮食出品率下降和营养流失，全谷物可最大限度提高可食用利用率，相当于开发“无形粮田”，对保障粮食安全具有战略意义。
数据显示，中国居民全谷物消费占比不足1%，远低于发达国家的20%—35%。在中国科学院院士张启发看来，发展全谷物是粮食安全与健康中国两大战略的交汇点，是节粮减损、提升粮食利用率的关键路径，有助于守护国民健康。
谭本刚介绍，目前，中国在全谷物食品同煮同熟、口感改善、保质期延长等关键技术上取得突破，龙头粮油企业纷纷推出全谷物低GI(低GI，即低升糖指数)面粉、杂粮挂面等创新产品。同时，全谷物标准体系的构建为产业高质量发展指明方向。
谭本刚表示，下一步，还将继续强化公益科普宣传，普及全谷物健康知识，同时补齐全谷物产品细分品类标准，优化口感风味，研发即食便捷产品，让科学膳食理念更加深入人心。(完)
