"Biodiversity. Be diversity". The motto of Terra Madre - Salone del Gusto 2026 held in Turin from 24 to 27 September celebrates slow food, attention to the environment and the social costs of food. It is the sixteenth edition of the initiative which this year brings producers, farmers, cooks, fishermen and fishermen, breeders and breeders, researchers and activists from all over the world to the heart of the city. The common thread is precisely biodiversity, understood not only as the variety of species and crops, but also that of knowledge, cultures and communities that revolve around food. A special edition also for the history of Slow Food: this year the association turns 40 and Terra Madre takes place for the first time after the death of its founder, Carlo Petrini, who passed away in Bra on May 21st at the age of 76.
The market
The heart of the event will be the Terra Madre Market, distributed between Piazza San Carlo, Piazza Castello, Piazza Carlo Alberto, Via Roma, Piazza C.L.N. and Piazza Vittorio Veneto. Over 600 producers from Italy and abroad will bring to the city products and processes linked to the territories and the protection of biodiversity, to which are also added the Slow Food Presidia, the Ark of Taste and the various communities of the international network.
Tastings
For those looking for a tasting experience, the program includes hundreds of events including Taste Workshops, masterclasses, tastings and table appointments. They range from wines to cheeses, from coffee to cocoa, from beer to honey. Among the events on the calendar there are, for example, tastings dedicated to Taiwanese wild tea, cocoa and vermouth, Italian craft beer and wines from producers such as Ceretto and Biondi-Santi. Some activities are free, others require a ticket and for several initiatives reservations are required.

Meetings and debates
Next to the food there is also the part dedicated to the debate. The Slow Food Arena, in Piazza Castello, will be one of the main places of discussion: here we will talk, among other topics, about the right to food, indigenous peoples, young people, food education, community and the relationship between the digital world and food systems. Also on the program are meetings of Slow Food networks from Asia and the Pacific, Africa, the Americas and Europe. Among the guests of Terra Madre Salone del Gusto 2026 there are names from different worlds: Mario Calabresi will participate, together with Riccardo Dugini and Barbara Nappini, in "40Pod", one of the events dedicated to forty years of Slow Food. There is also space for the theater with Lella Costa and Moni Ovadia, protagonists of the meeting "Good, Clean and Right", and with Paolo Hendel, guest of "Another idea of the world". Among the experts involved is food historian Massimo Montanari. And then a series of international voices: from Satish Kumar to Alice Waters, passing through Raj Patel, Eric Schlosser and Roberto Danovaro.
Attention to the environment
Another thread runs through the program: the relationship between nutrition and the environment. Among the meetings reported by the organization are "We are the sea. How to regenerate marine biodiversity", dedicated to marine ecosystems, and "Earth and peace", as well as events on agriculture, supply chains and the future of food systems. Biodiversity is in fact the theme chosen for the 2026 edition, expressed not only in its natural and agricultural dimension, but also cultural and social.
For the little ones
There is no shortage of events designed for the younger audience. The educational activities involve schools, girls and boys and offer sensory games, workshops and meetings related to food and food knowledge. The city also becomes part of the program: restaurants, clubs, schools, school and community gardens are involved in the initiatives connected to the event.
