Free gluten-free and lactose-free baking course offered in Fernando de Noronha

The event is promoted by the Association of Pousadas de Noronha in partnership with the government of Pernambuco. More than 50 people have already registered, and there are still ten places available. Interested parties can contact us via WhatsApp (81) 99915-8399.

According to the organizers, the objective is to offer professional qualifications, create income generation alternatives and meet growing market demand.

"This is an unprecedented action and enables the production of gluten-free and lactose-free foods. The public that consumes this type of food is specific, and this is a growing demand on the island. Training the workforce is a differentiator for the Noronha destination", stated the president of the Tourism Council, Ailton Flor.

The training will be led by chef Camila Coêlho. Participants will learn production techniques, good food handling practices, food safety, recipe adaptation, pricing and marketing.

In the first stage, participants will learn about inclusive gastronomy concepts. Topics include celiac disease, cow's milk protein allergy (CMPA), differences between allergies and intolerances and cross-contamination. The necessary care in the kitchen and when serving customers will also be presented.

In addition, the course will cover ways to adapt dishes that are already on the menu of establishments.

In the second stage, the fundamentals of dairy-free and gluten-free baking will be taught. Participants will learn about choosing flour, bread structure, hydration, fermentation, flavor development, oven use, storage and freezing.
