The EMBL research team grew three-dimensional muscle structures containing neurons and blood vessels using bovine stem cells.
AI-generated summary
Previous technologies for laboratory meat production were mainly limited to ground meat. Recreating the complex tissue structure remained a challenge.
Meat produced from animal cells in the laboratory has been perceived for years as a more sustainable alternative to traditional animal breeding. However, existing technologies mainly allowed for the production of minced meat, and reproducing the complex structure of a steak remained a huge challenge. A key problem was the difficulty in obtaining the diversity of cell types and their interactions that are necessary to recreate natural muscle tissue.
Key achievement
Research team led by prof. Miki Ebisuya used a line of stem cells derived from cattle embryos. Unlike cells taken from adult animals, embryonic cells can divide for a long time and have the ability to differentiate into many cell types. By precisely controlling the development process, scientists managed to obtain three key components of muscle tissue: skeletal muscle cells, neurons and endothelial cells that form blood vessels.
One of the greatest achievements of the EMBL team was the demonstration that embryonic cells can not only develop into various cell types, but also organize themselves into three-dimensional structures resembling natural tissues. Within 15 days, it was possible to grow such "tissues" with a diameter of 0.6 mm, in which muscle fibers coexisted with networks of blood vessels and neurons of the spinal cord. This proves that it is possible to obtain complex, multicellular structures without the need to manually connect individual cell types.
The presence of endothelial cells and the formation of a network of blood vessels is a particularly important step forward. In natural tissues, blood vessels deliver oxygen and nutrients, allowing larger structures to grow and stay healthy. Although the vascular networks obtained in this study are still primitive, they represent an important step towards cultivating larger and more complex tissues.
Proof of concept
Scientists emphasize that their achievement is only a verification of an idea, and not a ready recipe for the production of steaks from the laboratory. The cultured tissues are still very small, and to obtain a steak of appropriate size and structure, it will be necessary to develop methods to grow larger tissues and develop more advanced vascular networks.
Another barrier is cost. The cultivation of embryonic cells and the control of their development currently require very expensive media and reagents, which makes production on an industrial scale unprofitable. However, according to the researchers, their work opens new opportunities not only for the food industry, but also for regenerative medicine and tissue engineering.
The three-dimensional bovine tissue model developed by the EMBL team is also a valuable tool for research on muscle development and the interactions of various cell types. This allows you to conduct experiments that were previously impossible in simpler cell cultures.

Sonda BepiColombo, wspólna misja ESA i JAXA, rozpoczyna kluczowy etap separacji modułu transferowego MTM.

Naukowcy z Berkeley i Uniwersytetu Arizony zbadali genom nietoperzy z rodzaju Myotis.
